Yogurt Parfait & Turkey Sandwiches w/ Chips & Pickle

  Necessity was the mother of invention on this recipe. We had just got home from picking strawberries that evening and the kids asked for a strawberry dessert. I happen to have vanilla Greek yogurt and graham crackers on hand so I was able to put these together in must minutes and they were a hit!
Ingredients:
  4 cups   Greek Vanilla Yogurt
  6   Full Graham Crackers
  2 cups   Fresh Strawberries (sliced)
Directions:
  This couldn't be any easier. Add 1/2 cup of yogurt to a small bowl (or my favorite a short clear glass that shows off how pretty this is when you put it together). Take one of your graham crackers and crumble it up over the yogurt, add a layer of strawberries. Add another 1/2 cup of yogurt then another layer of graham cracker crumbles and strawberries. Serve immediately so your graham cracker crumbles are still crunchy.

  Turkey sandwiches make for a quick & healthy supper and it's a great way to use up left-over turkey.
Ingredients:
  1/2 loaf   bread
  1 lb.   sliced turkey
  1/4 head   lettuce
  1 large   tomato
    Mayo (optional)
    Mustard (optional)
Directions:
  Slice tomato and rinse and dry lettuce. Spread mustard and mayo on bread. Top with turkey, lettuce, and sliced tomato. Cut sandwiches as desired and serve.
